Cheers to a late post! I have clearly proven very incapable of keeping up with a blog. And blogs need nurturing. My blog is a stunted kindergartener. I wanted to eventually share with you photos from Mother's Day - I guess today is the day! The three of us (my mother, my sister Katharine, and I) are very fond of food. We are fond of eating it, cooking it, preparing it, watching others enjoy it, and then suffering from severe cases of food (and wine) coma because of it. We are also fond of the time that it allows us to spend together.

For Mother's Day, my awesome mother Amy's one request was that we try to make Cambodian nime chow rolls with a peanut dipping sauce. We have devoured them at numerous restaurants and always thought the idea of recreating them to be daunting. The three of us packed up and took a trip to Whole Foods to make sure we had all the correct ingredients.
It took a couple tries to fully understand the strength and rolling technique of the rice paper. We had a ton of laughs trying to keep the contents of the roll from falling out. We also ate the poorly rolled ones while we prepared. We were full before the meal was finished being plated.
So, in true family fashion, we embarked on a post-meal walk to the water...
It was a beautiful day to celebrate a beautiful mother. Everyday she reminds me how proud I am to have been (and continue to be) raised by her. I cannot gush enough about how lucky and grateful I am to have her in my life. I love my momma a helluva lot. How did you spend Mother's Day?
